The recipe takes a little work for a week night meal, but worth it. It has just the right amount of zing. I'm not a big fan of spicy, but I really love this recipe. If you like things really spicy, I suggest adding a few more teaspoons of hot sauce to the batter.

I make the same thing almost, using whole tenders. This looks fantastic, and using pancake mix.. Illl have to try soon! Superbowl, maybe!

Mmm I love buffalo chicken! I make something similar but cut the chicken into strips and bake them.
