A while ago, I was in Marshalls and bought this cookbook "The Get 'Em Girls Guide to the Power of Cuisine". It's mainly dishes for women to cook for the men in their lives. It has SO many great recipes in it.
I had made the recipe for Fettuccine Alfredo with Shrimp before, so this week my daughter suggested I make it with chicken.
I followed the same recipe, but I doubled it. I also substituted the shrimp for two packages of cut up chicken tenderloins. I cooked and browned the chicken seperately in a pan with a little butter. Then when the chicken was done, I added the rest of the suggested amount of butter, cream and cheese.
I think because I doubled the recipe, it did not thicken the way I would have liked. I added a little cornstarch mixed with water and perfection. It thickened right up.
The recipe really is simple. When I think of Fettuccine Alfredo, I think it sounds hard. It really isn't. Give it a try! I found the link for the recipe here if you would like to give it a try. :-)
