So this past week I was making my grocery list and I could not think of anything new to make. I looked through my cookbooks and found nothing. So I took a visit to the Pioneer Woman's site. She has SO many awesome recipes on her site. I told my mom I want her cookbook for my birthday. I can't wait! I was kind of in a rush when I made this because I was trying to get dinner on the table before my daughter had to leave for work. Can't send her to work hungry. This explains my lack of pictures throughout cooking this meal. Aren't those veggies colorful? Very pretty!
